Turkey Ragu

- ground turkey
- 1/2 onion, chopped
- 1 carrot, diced
- 1 garlic clove, sliced
- 1/4 cup milk
- 1 small can tomato paste
- 1/4 cup red wine
- red pepper flakes to taste
- salt and pepper to taste
- parmigiano reggiano
- pasta (fresh or dried)

- boil salted water in large pot
- sweat onions and garlic in a large saute pan, season
- add small amount (to taste) of red pepper flakes, stir
- turn up heat to medium / high
- add ground turkey, break up, and brown, season
- add milk and simmer until milk is incorporated
- add can of tomato paste and stir in
- add red wine
- simmer until you are ready to eat
- add pasta water if mixture dries out
- cook pasta and stir into ragu when al dente
- grate parmigiano reggiano onto pasta and serve
