Quick Healthy Lunch with some Cool and Kick
One of my favorite, easy, and healthy lunches is to make a quick sandwich with a whole wheat English Muffin, a pan fried (defrosted) tofu chicken patty, sliced hot house cucumber, sliced avocado, cilantro, and sriracha. This little sandwich sometimes gives me everything I want: crisp, cool, heat, flavor.
My preferred tofu chicken patty brand is the Morningstar Farms Chik Patties Original - they seem to be a little "meatier" and have a sweeter flavor than the Original Chik'n Patties.
